1/2 cup Mozzarella, packed and grated on small holes of a box grater
1/4 cup Almond Meal (or almond flour)
1 1/2 tsp Brown Sugar
1/2 tsp Psyllium Powder
1/2 tsp Baking Powder
1/4 tsp Cinnamon
1/4 tsp Vanilla Extract (or vanilla paste)
1 Egg
1 tbsp Pearl Sugar (or crushed sugar cube pieces)
- Whipped Cream
- Fresh Fruit
- Caramel Sauce, warmed (optional)
- Chocolate Sauce, warmed (optional)
- Nutella (optional)
- Heat waffle iron to medium setting.
- Mix all dry ingredients thoroughly, then add egg and fold in pearl sugar.
- Using a
1/4 cup measure, pour batter into one waffle iron quadrant.
- Cook on medium until crispy and cooked through.
- Serve with desired toppings.
- Waffles will firm up as they cool.
- Store leftovers in a sealed container; reheat in a toaster oven on low until the sugars crisp up again.
- Pearl sugar creates the signature caramelized crust — crushed sugar cubes work as a substitute.
